Grilled Jerk Chicken Skewers: A Spicy Canadian Summer Hit

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
  • 2 tbsp olive oil
  • 2 tbsp jerk seasoning (store-bought or homemade)
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp soy sauce
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch chunks
  • 8-10 wooden or metal skewers
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions

  1. Marinate the Chicken: In a large bowl, mix olive oil, jerk seasoning, lime juice, honey, and soy sauce. Add the chicken chunks, toss to coat, and let marinate in the fridge for 30 minutes (or up to 2 hours for extra flavor).
  2. Prep the Skewers: If using wooden skewers, soak them in water for 20 minutes to avoid burning. Thread the marinated chicken, bell pepper, and onion onto the skewers, alternating pieces for a colorful look.
  3. Get Grilling: Preheat your BBQ to medium-high (about 400°F). Lightly oil the grates. Place the skewers on the grill and cook for 10-12 minutes, turning every few minutes, until the chicken is cooked through (internal temp of 165°F) and slightly charred.
  4. Serve It Up: Transfer the skewers to a platter, sprinkle with fresh cilantro, and serve with lime wedges for a zesty squeeze. Pair with grilled corn or a cool cucumber salad for a perfect summer spread.

For an extra layer of flavour do these on the smoker with some pecan or hickory smoking chips. No smoker? No problem use a Napoleon smoker tray in your gas grill to achieve that great smokey flavour!
